THE LOCAL LENS · SHANGHAI
Zao refers to rice-wine lees and their aromatic brine. It does not mean the snails are served raw.
Separate the wine-like aroma from the snail’s firm texture.
Shanghai’s general gazetteer lists zaotianluo among the city’s snacks. The detail to keep is the technique: cooked food gains another layer through aromatic brine. A note about aroma or texture can sit beside that craft, without inventing a historic restaurant visit.
Ask for thoroughly cooked snails before marinating. Check alcohol and mollusc ingredients; brine is not a substitute for cooking.
